Why choose the “Coup de Feu” plate?

The Lacanche coup de feu griddle is a cast-iron griddle that traditionally forms the central part of the cooking surface of the stoves used by chefs. Its large surface area can accommodate several pots and pans. You can also cook in the ‘WOK’. When not in use, it can also be used as a serving or dressing surface. Formerly in raw cast iron, Lacanche now offers an enamelled finish for easy maintenance.

Cooking principle

Thanks to cast iron, which accumulates and retains heat evenly over its entire surface, preparations can be seared, simmered or kept warm, depending on the temperature. By ensuring an even temperature gradient across its entire surface, it makes it possible to adjust cooking or simmering precisely. The coup de feu griddle is ideal for long cooking of simmered or braised recipes.

However, for simmering and braising, it is recommended to set the heating speed to low or medium, depending on the intended cooking time, as cast iron has a high inertia and the surface temperature cannot be reduced instantaneously.

For cooking in direct contact with the flame, the 5 kW burner can be used as a traditional fire after removing the central plate pad.

This fire plate is offered with the “Tradition” tables for all Lacanche cooking hobs.

A stainless steel cover to match the dimensions of the griddle is available as an accessory.
